Kitchen School

An online cooking school built into dinner

Cooking courses ask you to set aside an evening to practise something you will not cook again for a month. Kitchen School teaches on the food you were making anyway: how to get a real sear, why a pan sauce splits, when salt does its work, what changes when you roast instead of boil. The lesson is attached to the dish, so the practice is just dinner.

How it works

  1. Technique explained where it is used, not in a separate course
  2. Three effort levels, so the same day can be simple or a project
  3. Cook it, then keep it — the kitchen diary remembers what you have made

Questions, answered

Is this for beginners?

Yes, and not only. The Easy level assumes nothing; the Sophisticated level is a genuine project with restaurant technique in it.

Do I need special equipment?

No. Everything is written for an ordinary domestic kitchen — a pan, an oven, a knife worth sharpening.

Are there video lessons?

The teaching is written into the recipes and the tips, so it is there at the moment you need it rather than in a library you have to visit.

Is this any good for cooking for beginners?

It is aimed squarely at it. Cooking for beginners usually means being told what to do without being told why, so nothing transfers to the next meal. Each day teaches one technique on the food you were already making — how to tell when a pan is hot enough, why the meat needs to rest — so the skill carries over.
